Lemon juice and sugar every time for me, Ian.
I can't have them too often. I get into a pancake frenzy and end up eating enough to feed a horse. If I was home alone for dinner, I sometimes to used to make a batch, thinking I could leave the rest of the mixture in the fridge for the others when they got home.
Unfortunately there was never any left. Just me laid out like a bloated sheep.

What have you had on your pancakes ?? i've had sugar and lemon on some ,syrup on others If it is proper maple syrup, good, I'll have a bit of syrup, otherwise a little lemon and sugar. BB, a basic pancake mixture is flour, milk and egg, panfried in a barely greased pan. Too easy, why don't you give it a go? You don't mind trying out new things in the kitchen. Some recipes have sugar in them, but this is the most basic: 1 egg 1 cup plain flour 1 cup milk Mix egg and milk, sift flour, mix to make a thin smooth batter. Heat a heavy-based pan quite hot, greased with either an oil spray or a little butter, pour in an amount of batter (depending on how big you want them) quickly tilting the pan so the mixture forms a thin circle of batter evenly spread. Lightly brown on one side and flip to cook the other. Too easy.

Have you ever had French crepes, BB? Like Crepe Suzette? Pancakes with lemon and sugar are a lot like that.

This recipe in the link has full instructions. They're really easy to make. Don't get the package stuff. It won't be anywhere near as good. Only other advice is, once you make the batter, leave it to sit for 30 minutes in the fridge. Also, the first pancake is generally a write off. The butter is important. It gives the pancakes all their yummy flavour. Maple Syrup for me please I also like chicken legs, thighs, wings (with skin on of course) roasted and very liberally drizzled with maple syrup.
