I decided to try what’s called a Basque cheesecake. I stupidly added lemon juice instead of zest. A bit looser than I’d like but nice. Next try will be correct ingredients

It is Joseph Denison Carey's Basque baked cheesecake. It’s done with cream cheese
Basque baked cheesecake Serves: 6-8
Ingredients
1 x vanilla bean Zest of 1 lemon 150g caster sugar 500g cream cheese 3 x whole eggs 250g double cream Pinch of salt 25g plain flour, sifted
For the brittle
150g pistachios 150g sugar
Need: 1x loose-bottom cake tin approximately 19cm in diameter and 7cm in depth
Method
1. Preheat the oven to 200c. Grease the cake tin with butter then line it with parchment
2. Scrape out the inside of the vanilla bean and, in a mixer (with a paddle attachment), beat with the zest, sugar and cream cheese. Once smooth add the eggs one at a time, then mix the cream and the salt in.
3. Fold the flour in with a spatula by hand, and pour the mix into the cake tin
4. Bake in the preheated oven for 30 minutes, then reduce the temperature to 180C for a further 30 minutes. After this time, the top should be browned and the centre still appears undercooked and jiggly.
5. Let it rest at room temperature for about an hour and cool, then chill in the fridge
6. Meanwhile, make the brittle. Roughly chop the pistachios, then place them onto a lined baking tray and set aside.
7. Place the sugar into a saucepan at a medium heat to caramelise. When browned and turned to caramel, pour over the chopped nuts in the tray and leave to set to a brittle.
8. When set, wrap the brittle in a tea towel and crush using a rolling pin. Sprinkle on the cheesecake to serve.
If you don’t have vanilla bean, I used a tablespoon vanilla extract

I have two street level windows and have always thought that I should do something a bit creative with them. After taking part in the Window Wonderland initiative at Christmas, I have decided to keep the display theme going. Here is my window aquarium featuring fish made out of felt scraps and a few things I have bought or been given over the years

Thanks for taking the time to write that out ffiscool, I'm definitely going to give it a go. That's gorgeous birdguhl, so pretty and colourful. It reminds me of the shoebox diorama's I used to enjoy making so much with my son when he was younger. I'm sure your window is making everyone who sees it smile

Oh willowsmum - shoebox dioramas! Thanks for reminding me about them - could be a good project for friends’ kids who will still be off school for a while - the right age too as they can be fiddly but really fun!

birdguhl That's a great idea to stretch imaginations and keep the children occupied. They can be easily made with bit's and bob's around the house and can be as basic or detailed as they like, then maybe a little 'presentation' to the family once they're done There's something nice about looking in on little miniature worlds

Shoe box dioramas. I think I had more fun with them than the boys. . I vividly remember a “Wonders of the Reef”, made from “nothing new”.

This is the time of year that I think abut who I want to knit socks for as a Christmas gift. This was a new pattern with the ribbing and a yarn I hadn't use before. Kind of a pain trying to get the stripes to line up on each sock.
