10" will give you a wider but shallower dish, so probably better. Show us the results please?
I actually did one with the 10" blade before buying the 7" blade Daz, I must say I prefer the 7" blade concaves as they are that wee bit deeper and not as wide as you say.
Here's the pictures.

Umm, perhaps if you know that your hen is a large clutch layer then put the 10" ones in, if not then the 7's will be better. Good work! Just out of curiosity, how many teeth does your blade have, because that looks like there is no tear out at all. I threw away the blade that came with my table saw and went and bought a decent one, it makes one hell of a difference! My table saw is the Kity 419, with sliding table and extra side extensions. Absolutely beautiful machine. www.powertooldirect.co.uk/kity_419_circular_saw_floor_stand_stc_twe_240v-p-77678.html

I have 40 teeth on the 7" blade but not sure about the 10 inch blade as wasn't in my work shed today. I bought the 7" one from ebay for £12.99...

I've had mine about 10 years now, and the price seems to have shot up from what I paid. I know Kity went out of business about 7 years ago, so someone must have bought in and kept it going.
