What signs are there that budgies are breeding as I think one of my pairs have been breeding

My male was bobbing his head ( I think that I like a mating ritual) and my female has started going in the nestbox a bit more, but there aren't any eggs yet

If you do not want them to breed, take out the nest box. If the birds have only just started to interact, they are probably quite some way off being paired up enough to be mating. Head bobbing, dancing, and feeding are signs that the two are becoming good friends, not necessarily a mating pair. If you only had two boys they would most likely be showing the same behaviour.
