I was going to grow a new patch of wheatgrass for the boys to chew and forage in, and I thought I might try to sprout some of their seed mix along with it so the seeds mingle and make even more of a foraging challenge.
But I think I once read something about millet spray not being safe until it reaches a certain height? I cannot find it now.
I know millet sprouts seem to be fine, but what if it gets beyond sprouting and starts to grass?

That's not something I have ever heard of before, and I don't see how a grass could go from being perfectly safe (sprout) to not safe (being short) and then back to being safe again (taller plant). Most people will wait until the millet gets a seed head on it first, but I've never known anyone to have had any problems with the birds nibbling on the grass as it is growing.

You're right, that does sound kind of nonsensical I think it was an anecdotal post by someone who said they grew millet and one time they harvested it before it was the "right length" and a bird died. But I've also seen someone claim that silicone kills birds just like teflon, and I've never found any actual evidence for that. Probably just people looking for any kind of justification for a tragedy.
