I have a female budgie I got on October 20th. I've been struggling to feed her fruits and veggies. I've tried to hand feed her apples, corn, peas, spinach, and lettuce but she ignore it. She only nibble at the lettuce and the corn, but I don't know if that means shes tasting it, or trying to eat it. I've also tried to mix it with her food, but she only picks out the food. What should I do? She's young too, so I'm not sure if that makes a difference or not.

Budgies are not really big fruit eaters.
Try carrot, first off try it whole, if it's quite large half it down the middle and clip to the cage, if after a few attempts you still have no takers, try it grated and put in a dish, or chopped up.
Really with budgies it's trial and error until you find out what they like. You could also try a floret of broccoli, or, a piece cut off a corn on the cob.

Once she has bonded with you more, you might find that if you eat she will want to try. That's the easy way and doesn't always happen. With carrot you can try slicing fairly thin rounds with a veggie peeler and pegging these up. I've seen budgies often go to try carrot but stop when they meet that resistance and not bite any harder. A thin slice allows them to bite into it and take a piece off easily. At this stage you want to make it as easy as possible to get them trying as many different things as possible.
Favourites seem to be snow peas, carrot, corn. Anything grassy is usually seen as edible, if you can find any seeding grasses and get them eating these, that would be great. This is their natural food, and they do seem to recognise it as food. Many other veg they need to learn that they can be eaten.
Apple is a fruit that they usually take to, so a small amount of it won't hurt and if she will eat apple at least then you can introduce other things around the apple and slowly move her away from it on a regular basis. Our budgies don't need the sugars in fruit, they don't expend enough energy for it to be totally used up.

I looked up to see herbs as dill and mint needs to be given in limits. Learnt about limiting spinach too from this forum. I am adding new leafy grass/veggies to them, however they love coriander, which also falls under the herb category.
Is an alternate day coriander harmful for them, apart from additional veggies there.
Also, do the daily wheatgrass and other sprout/seed fresh leaves have to be limited?

I gave Bella a slice of apple for the first time yesterday. She loved it.

Most of the fresh food does not need to be limited. The herbs, especially the strong ones, are best limited and the same with spinach for its inhibiting calcium uptake properties. With any of the herbs, it really does depend on how much of each they eat. A few nibbles is not going to hurt but a full feed is not going to be good. Variety is the key, no great amount of any one thing. Some herbs are very intense, and I think the limiting of them is simply erring on the side of caution due to the medicinal properties of a lot of them. No real studies that are budgie- or even bird specific have been done. The only time I would limit the veggies, sprouts and grasses is when they may be ill or showing changes in their poops.
