Hi Guys,
After some more information.
I've got a clever little one here... she steps up whenever I want and has flown to me occasionally when I call. I've taught her to 'touch' a stick with her beak and she lets me rub her head feathers.
She has started to preen my hair and neck when shes on my shoulder.
Currently she has started either biting or preening my fingers. She isn't doing it hard but I'm concerned that she will start to do so. Sometimes she seems like she does it as a defiance when she doesn't get a treat. But sometimes she does it when shes just sat on my finger.
Any thoughts?

If it is a preening nibble, just leave her be. If it more of a bite, give her a little push with your finger, away from what she is doing and use some sort of negative sound to let her know that behavior isn't acceptable.

Couldn't agree more - hens do get a bit bolshie when they are in moult and even when they get excited and play bite, but just as long as you dont let her win if she does bite aggresively or too hard. We always used to put our Mont back in her cage straight away after telling her no when she got a bit bitey. In the end she learnt that this was not good behaviour as it shortened her time out of the cage
