Hi I have a gorgeous hen who successfully raised 3 healthy babies. The last left the nest on Sunday the 13th if July however on the Saturday the 12th I found an egg the mum was sitting on in there and on the 14th I found another...I have been told she will be okay to have another lot since she's already started laying but to next time take away any eggs/nesting boxer extra fast. I was planning on giving her a well earned rest but she laid before I could. What should I do?? My main priority is keeping mother hen healthy and happy

It is very normal. Most start laying even when all the chicks have not left yet. Two clutches are fine for a pair within a year or so.

Welcome , to stop this next time remove hen when youngest is around three weeks. The cock will finish the rearing and the hen can rest before going back into the flight.
