Your carrot has only just had its growth halted, when you pulled it up. Carrots from the store will have been harvested weeks, possibly months ago, losing any of that carroty smell long ago. I would bet that your carrot would do the same if left for a few weeks, but what a waste that would be. I would already have eaten it.

I cut one of the side lobes off and munched on it. It was delicious! If store carrots tasted like that, I'd eat more of them.

Home grown taste so much better that I won’t even buy tomatoes at the store, even in winter. I just go without. The difference is too great! Ihaven’t mastered growing carrots yet though. They taste good, but they all end up short and stubby. I’ve heard you can grow them in old coffee grounds though. Any stones or compacted soil makes them stubby, and too nutrient dense soil (too much organic matter or fertilizer) makes them grow side roots.

Interesting Morgan! As you can see my carrots are short, stubby with side lobes. The carrot greens look good and that was the point of my growing them - for the greens for Tweetie Pie and Buddy.

You must have good fertile soil! Too bad its bad for growing straight carrots, apparently! xD You can sift your soil free of rocks and such using anything with a screen or grate in it that will let soil fall through but nothing bigger than a pebble. If you want to try mastering long straight carrot growth. Adding all your coffee grounds, if you drink coffee, may help too. I will try it myself someday... right now the chickens are ravaging the garden so much that I'm feeling unmotivated to do much with it. Once we get it all fenced in though...
